Tilapia Brussels Quinoa

This protein packed dinner will satisfy your hunger, and is easy to make on a busy week night with little prep and pre-combined spices.

Servings: 2

Ingredients:

  • 2 tilapia filets

  • 1 lb brussel sprouts, sliced

  • 1 cup quinoa, dry

  • fish seasoning (or seasoning of choice)

  • salt, to taste

  • olive oil

Directions:

  1. Preheat oven to 425F.

  2. Prepare quinoa: rinse and cook in a pot of water. Adding the amount of water called for on the package directions.

  3. While quinoa is cooking, season tilapia filets with the fish seasoning (or seasoning of choice), and place on a lined baking sheet.

  4. Bake tilapia until done (145F internal temperature), about 10-30 min. depending on size.

  5. While tilapia is cooking, sauté brussel sprouts in olive oil, adding salt as desired, until tender crisp.

  6. Once everything is finished cooking, place quinoa in a bowl with brussels and tilapia.
